做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻炒(chǎo )1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝油翻(fān )炒均匀,加入少(shǎo )量清(qīng )水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时盖上(shàng )锅盖焖。
